Hello,
Sharepod is a free tool to transfer everything from iPod to PC. But I heard that it is not very stable. I know a tool named cucusoft iPod to computer Transfer can get music from iPod to computer easily. Get it to backup all your files from your iPod to your PC.

Depending on the version of your iPod, you can open it in the Explorer/Finder and view hidden files.

iTouch devices, might need software.

Jailbroken devices I think you can FTP into the phone and drag the folder of the music over.

thats how i've always done it. however, all the song titles are renamed to four letter titles, but hey, its better than spending money on something you really don't need

Well a good chunk of your files will have the metadata still there, so when you open the files in whatever you use (iTunes?), it'll pop in.

It's not a very organized, but its free.
