That list isn't as awful as I might have expected, but it's still totally unacceptable without the following, just off the top of the dome:
Final Battle from Tsui Hark's THE BLADE - Being held without parole in the Warner Bros. vaults, Tsui's remake of THE ONE-ARMED SWORDSMAN remains his finest hour. Thoughtful yet action-packed, there's nothing else quite like it.
Jet Li -vs- Donnie Yen, ONCE UPON A TIME IN CHINA II - the best fight, the best ONCE UPON A TIME IN CHINA film. Just watch.
Lau Kar-Leung and Jackie Chan -vs- The Axe Gang, DRUNKEN MASTER II - the original list picked the wrong fight from this film. Shot before Jackie fired original DMII director Lau Kar-Leung from the film because Jackie wanted more outlandish wirework and Lau wanted more traditional martial-arts forms. Lau, of course, was actually right, and here's the proof. The uncut version of this film is locked away at... Warner Bros, go figure.
Sammo Hung -vs- Lau Kar-Leung, PEDICAB DRIVER - ANOTHER prisoner of Warner Bros... words don't do this fight justice. Fat Guy fights Old Guy, audience wins.
