I don't think extinction has anything to do with any cultural shift in the way we view animal bloodsports. Bulls aren't an endangered species.
I think it could have more to do with the fact that us modern folks see it as less than a fair fight when a bullfighter goes up against a bull. It still takes balls to stand before an angry bull, and there's still drama in that of course, but the win/loss record tells the real story of the risk a toreador takes.
Nowadays human beings have many other ways to show their courage by entering sporting scenarios which risk their lives without resorting to torturing a beast so it seems unnecessarily cruel almost to the point of cowardice.
