There isn't much you
can't make with the tools they give you. They have alot of good pre-made items/patterns/materials to add onto the cars and racers, and you can layer up stickers and modify items until they look like what you want.
And, yes, the AI in the single player is complete bullshit. It's not so tough that you can't make it to the next race with a couple tries, but it seems like luck plays about as evenly as skill. No matter how well I do, I've usually got two or three other racers right behind me, and that makes for some really cheap shit when you get down to the last stretch.
The online racing completely saves it because the core racing mechanics are good. The karts handle well, the weapons/power-ups are balanced, and the tracks are fun. Once you put some actual humans in the game, it comes together nicely.
